Well, it depends on how the whole series carried out. Plot is one of many elements in a fiction, and it means from the beginning to the ending/resolution of the story. 29265j
For example, I love Kimetsu no Yaiba, but I was dissapointed with the rushed ending. I wouldn't give it a bad rating, but I would put the rushed ending into consideration.
How long is this ending? GoT had 2 bad seasons so that is 1/4 of the show being total shit. (S5&6 are also only ok.) AoT on the other hand has 2.1 absymal final chapters. 137/139 main chapters I can live with. So maybe. It really depends on when it all goes bad.

I voted "depends", precisely because it's really all a matter of how I enjoyed the entire series.
An ending does carry a certain amount of weight for me, but I'm not sure if it's always the most important aspect of my enjoyment of a series.
For instance, Gantz... I hated the ending, like most others, and it definitely affected my overall rating of the series, but not by too much. I ended up rating the series 7/10, where I may have rated it an 8/10 or 9/10 if the ending had been better. The poor ending really only took one or two points off my rating, because even though it was bad, it didn't really affect my enjoyment of the rest of it. The journey was still fun and exciting.
However, if there was a series where the entire thing was building up to what happens in the ending and the ending completely missed the mark, I would likely take more than just one or two points off my rating.

I voted "dislike", but something that happened recently has made me change my mind to “maybe”.
A series that I've been reading for 10 years and was really dear to me finished several years ago but I didn't want to read the ending (in this case were a lot of chapters) because I didn't want one of my favourite manga to end so I didn't do it. Then recently I got myself spoiled and discovered that one of the main characters dies in a pretty anticlimactic and absurd way for the type of manga we're talking about. So I tried to read it, and it was awful, I cried and I was overall devastated. After calming down I realized something…
I know that a bad ending, or worse, an ending that doesn’t fit the atmosphere of the series, comes from nowhere or it's unexpected it can be terrible. But if a series is dear to you, you had great moments with it or has accompanied you in difficult times and the characters made an impact on you I don't think it is wise to disregard all of that just because the author wanted to do something like that. Is better to cherish the journey and be happy about that, revisit the moments you liked, or even reread it! (In my case it's easy because the ending was so abrupt (and nonsensical) that consists of only 1 chapter or so)
So, if the series was overall great, with the ending being sad, unexpected etc. the only thing making it awful, I'd rate it with a good score (maybe lower if it had a better ending but good nonetheless), even if it was nonsensical and makes everything pointless, I feel like giving it a bad score won't be fair to the characters/story that made you feel happy or invested, especially if you read it as it was being published or has been with you for a lot of years.
However if you think the series was mediocre or irrelevant to you or too short to be into something, I totally understand why you’d rate the series badly. I’d probably do the same.
